The first time I remember winning something was in the second grade. It was a spelling bee, and I correctly declared g-i-r-a-f-f-e, giraffe. I won a magnet.

The second time was at last week's Prairie Hills neighborhood dessert contest, 20 years later. I received a $20 gift card to the local grocery store for my efforts. I'm becoming so domestic in this state of matrimony. Admittedly, I feel a bit guilty by beating out homemade ice cream and gluten free cupcakes. This recipe is ridiculously easy and neither gluten, carb, or sugar free, but it's a real crowd pleaser!

Chocolate Chip Cheesecake Dip:

1 8 oz. package of light cream cheese (softened)
1 stick of unsalted butter (softened)
3/4 cup powdered sugar
2 tablespoons brown sugar
1/4 teaspoon vanilla
3/4 cup mini chocolate chips
Graham Crackers

1. Mix cream cheese and butter until smooth
2. Mix in the powdered sugar, brown sugar, and vanilla
3. Stir in the mini chocolate chips, chill for an hour, and serve with graham crackers

If you follow me on instagram, you may have noticed I visited Austin, Texas last month. It was my first time to Austin, and while we were only there for 48 short hours, we hit up most of the spots on my must-see list.

The majority of our time was spent on 6th Street. My favorite bar was a dive on the Dirty 6 side called Dizzy Rooster, which I later found out was one of the favorite haunts of the Real World Austin cast.


The entire bar was covered in bottle caps. I loved every filthy, rusted one of them.


6th Street was oddly welcoming to K-Staters. Call it southern hospitality, or a way to get purple people in to your bar to spend a bunch of money. Either way, I liked it.


The weather was insane, and lucky for us we were out early enough to get a prime spot on the roof-top at Shakespeare's. From what I encountered, the tailgating experience is nothing like it is in Manhattan, or most Big 12 campuses for that matter. Instead of SUVs and RVs lined up in fields and parking lots surrounding the stadium, most people hang out at the bars on 6th Street, or went to a banquet hall that I can only describe as where your aunt may have had her wedding reception in the early 1980s. It was so Texas, and it was awesome.


After our loss (boo) and a perfect night's sleep on Saturday, we awoke on Sunday to meet friends at my now FAVORITE brunch place ever: Bess Bistro on Pecan. First off, they serve dollar mimosas, which apparently is a normal occurrence in Austin. This needs to become a thing in KC. Stat. Brunch was all-you-can-eat, so I started off with a mimosa and an order of deconstructed croque monsieur. I've never even had a constructed croque monsieur , so I wasn't really sure what I was ordering. It had just the right amount of truffle oil on the toast, a perfectly crispy-fried poached egg, and spicy blackened ham. After a pass through the delicious buffet line, Adam and I split the most popular order of the day - Fruity Pebble pancakes. Oh My G, I thought about those pancakes for days afterwards.


We had almost a full day before needing to head to the airport, so after eating our weight in breakfast food we bid adieu to our friends and went to Rainey Street. It's a small street where the adorable houses have been transformed into bars with backyard games, garages turned into restrooms, and parking lots filled with food trucks. Such a fun little street with so much character.

40 days without what?

Oh that lovely Lenten season is among us yet again. A time to sacrifice, which for some means giving up a guilty pleasure, and for some means enhancing life by promising to do something good for these 40 days. This year I decided I needed both in my life. Things to nix: beer and french fries. Thing to add: praying every single day. No exceptions. 

Not that indulging in beer and french fries puts me at odds with my religion, but it will be a test of my self-control. Beer, with its convenience and low price tag during basketball season (not to mention the green kind on St. Patty's Day) will be difficult to say no to. I guess this will make my red wine habit even more ridiculous.

When dining out, I never opt for a healthier option when french fries are the standard side with a pub sandwich or burger. Don't even get me started on how much I'm going to miss dipping them in a variety of condiments. In case you're curious and didn't give up fries for Lent, Blanc Burgers has my very favorite sauce. I crave the spicy tanginess of their orange dip. OK I need to stop talking about this, it's 10am on the third day of Lent and I'm driving myself crazy writing this paragraph.

One of my favorite months has come and gone. May was filled with tons of sun, a tiny bit of travel and plenty of patio time. Can't complain about that!

Happy Friday readers! Remember when I said back here that I was making Valentine's Day sugar cookies with my friend? Well that happened, but ditzo here forgot to write down the recipe! I will update this as soon as I get the recipe so everyone can enjoy slaving over these yummy cookies next year. I say slaving, but it was actually really fun. Stasia had the dough pretty much all made by the time I got there, so I started here, with rolling and cutting it out!


In very specific quantities, here's what you'll need:
Dough:
1. A bunch of granulated sugar.
2. Many, many sticks of Land O Lakes salted butter
3.  Flour. Lots of it.
4. Probably eggs? I'm obviously rewriting this for you when I get the real recipe. 
Icing:
1. About 12 pounds of powdered sugar (you wish I was kidding.....)
2. Almond flavoring
4. Vanilla extract, get the clear kind so it doesn't tint your dough
5. Meringue Powder. I didn't even know this stuff existed before, but it's a sub for egg whites.
6. Butter flavoring
7. Water. The only semi-healthy ingredient you'll see all day. 



Once the dough has chilled, been rolled out and cut, you'll stick them on an ungreased cookie sheet for 7 1/2 minutes at 375 degrees. Then roll, cut, repeat!

By the time we got through all the dough Stasia had prepared, we had made 225 cookies. WTF. It was awesome. Cookies were taking over her gigantic kitchen. 

Now on to the icing. The key is to make two types with different consistencies from the same batch. Start with making the "piping" icing. This is the thicker of the two that you'll use for the outline of the cookies and any words, polka dots, or other details you want to add. 

Once you've got the icing to the color you want, pour half of it in to an icing bag with a medium-sized tip. Then add more water to the rest of the icing in the bowl. This half will become your filler icing, use it after you've outlined the cookies with the piping icing. Pour the filler in to another icing bag with a smaller tip. See what I'm saying? Two different consistencies, same great color. That's the secret. Repeat until you've made all the colors of icing you want. Keep the bags of icing setting in cups (we used red beer pong cups) so the icing doesn't spill all over the place. 

Next, you decorate! Don't forget to outline with the piping, then fill with the thinner icing. Wait for the filler to dry if you want to write something (like those rose buds or the big "A"). If you want to make pretty designs (like the chevron-ish lines or the Salvador Dali hearts), don't wait for the filler to dry, hurry up and pick up a different color filler and get to work with a toothpick!


And voila! At the end you have some beautiful cookies and a hand cramp! And they'll be so pretty that no one will believe you made them yourself. All your valentines will be delighted when you show up at their door with these treats. And your co-workers will love you forever.

trip highlights: napa wino weekend

Happy hump day! As promised, here is the recap of my wonderful weekend getaway to Napa with my girlfriends!! If you are not at all interested in reviews of places to eat, wineries to visit or the other lovely amenities Napa has to offer, skip down to the pics..... But fair warning, you should be interested. Napa is amazing!

First item up for discussion: The Vineyards

We trekked to nine wineries over our three-day stay. My favorites were the ones tucked away in the mountains where the GPS lady would say our destination was only 6 miles away, but it took 25 minutes to get there due to the windy roads hugging the cliffs. Of course there wasn't a single vineyard that was less than enjoyable, but my two favorites were Barnett Vineyards and Outpost Wines. These had the best views, excellent ambiance and my favorite Pinot Noir and Grenache, respectively.

The other *wonderful* wineries we visited were Cade, Alpha Omega, Cliff Lede, Hess, Robert Mondavi, Grgich Hills and Darioush. I could seriously write an entire post about each of these experiences they were so great.... well except Cliff Lede, where I was more than a bit hazy after 3 wineries and a visit to Pancha's (make sure you have cash and have decent knowledge of Dire Straits for this little gem!). So I guess I need to go back to give Cliff Lede a real chance next time.

Second item: f00d!

Like I said in my previous post, we had all of our tasting fees waived, and did I mention we had all of our accommodations taken care of, too? Seriously, my friend is a big shit in the wine industry. So we decided to spend all our funds saved up for the trip on food!

My no-contest favorite meal was at Redd, where I enjoyed scallops, fried bone marrow (that was a first) and the most amazing steamed pork buns I could have ever imagined. For real. We all enjoyed the pork buns more than our expensive entrees.

Other restaurants on the must-visit list were Mustards Grill and Bistro Jeanty. Both fabulous for foodies and non-foodies alike. I unfortunately fall in the non-foodie category since I'm on the picky side, but I'm trying to get better!!
